It was prepared in the “Sciamadde” (that literally means flame) in the ancient port of Genoa, where small street vendors used to cook the focaccia over the flame. For its high energy values, given by the Ligurian extra virgin olive oil, the Focaccia was the favorite food of Genoa sailors."
